Chicken Rendang

Chicken Rendang 

1 medium chicken cut into medium size pieces, or chicken parts, lightly seasoned with salt

Ingredients
5 cloves garlic
5 shallots
2 big onions
1” ginger
1” galangal /lengkuas (blue ginger)
1” kunyit (turmeric root)
2 lemongrass, cut small pieces
5 buah keras (candlenut)
1 tsp chili powder or fresh red chillies to taste

Blend the above ingredients in TM 10s/5. Add a little water if necessary. Scrape down then 10s/6.

5 tbsp cooking oil
100 ml water
1 assam peel
1 turmeric leaf, finely shredded
6 kaffir lime leaves, torn
2 lemongrass, bruised
150 ml thick coconut milk
salt to taste

Method

  1. Fry spice paste in oil till fragrant.
  2. Add in chicken. Cook for 5 mins, turning chicken pieces halfway through.
  3. Add assam peel, turmeric leaf, kaffir lime leaf,  lemon grass and water. Cover and simmer for 20 mins, stirring occasionally.
  4. Add coconut milk and salt and cook for a few minutes more.
