Made a Pugliese from a recipe in the bread book using spelt flour. This is the result. I have yet to try it. It just came out of the oven.

Chicken Rendang
1 medium chicken cut into medium size pieces, or chicken parts, lightly seasoned with salt
Ingredients
5 cloves garlic
5 shallots
2 big onions
1” ginger
1” galangal /lengkuas (blue ginger)
1” kunyit (turmeric root)
2 lemongrass, cut small pieces
5 buah keras (candlenut)
1 tsp chili powder or fresh red chillies to taste
Blend the above ingredients in TM 10s/5. Add a little water if necessary. Scrape down then 10s/6.
5 tbsp cooking oil
100 ml water
1 assam peel
1 turmeric leaf, finely shredded
6 kaffir lime leaves, torn
2 lemongrass, bruised
150 ml thick coconut milk
salt to taste
Method
- Fry spice paste in oil till fragrant.
- Add in chicken. Cook for 5 mins, turning chicken pieces halfway through.
- Add assam peel, turmeric leaf, kaffir lime leaf, lemon grass and water. Cover and simmer for 20 mins, stirring occasionally.
- Add coconut milk and salt and cook for a few minutes more.
